Maple Crème Brulée

Ingredients: 

1 cup Brown Sugar, packed
½ cup White Sugar
¼ cup Acadian Maple Syrup
10 Egg Yolks
2 Egg Whites
¼ tsp Salt
34 fl oz Whipping Cream
Sprinkle Maple Sugar

Method: 

  • Scald whipping cream with brown sugar and maple syrup
  • Wisk together the salt, yolks, whites, and white sugar until pale in colour and thickened
  • Wisk scalded cream mixture into yolk mixture
  • Strain
  • Pour into ramekins
  • In a water bath, bake at 300ºF, until set (approx. 90 mins)
  • Allow to completely cool
  • Just before serving, sprinkle tops of custard with Acadian Maple sugar and torch
