Why do we love soup so much? It’s easy to make. It’s comfort food. It’s delicious. It’s a great way to use local ingredients. We could go on and on. But we’d rather give you some great recipes that you can put on the stove and enjoy tonight.


1. Woodsy Mushroom Soup

Mushrooms are just one of those foods you either love or you don’t. We’re solidly in the love them camp. And with producers like Maritime Gourmet Mushrooms, there are so many tasty options. However, if you’re on the fence, we bet we can sway you with this recipe that’s earthy and flavourful and not overly mushroomy. (Is that a word?)


2. Tomato & Basil Bisque

This is a flavourful twist on classic tomato soup. And what’s a better pairing than a cool fall day and a warm bowl of tomato soup. This recipe has plenty of ingredients you can find locally including onions, tomatoes, zucchini, basil, garlic and red wine. For the croutons, we suggest using Wandering Shepherd, Blue Harbour or That Dutchman’s Dragon’s Breath Blue.


3. Cream of Onion Soup

Fall brings us freshly harvested onions, but the great thing about many root vegetables is that cold-storage means you can find local ones year-round from producers like Country Magic. 4. Scallop Chowder

This technically isn’t a soup, but it goes in a pot, then it goes in a bowl, then it goes in your mouth - so it goes on our list. We really like this variation on classic seafood chowder. It makes scallops the star and that’s what really makes it stand out.


5. Spanish Stew with Haddock

What’s the difference between a soup and a stew? Just the amount of liquid really. So, we had to share this hearty dish (and we’ll call it a really thick soup). This jumps with local flavours including Nova Scotia haddock, potatoes, onions, garlic and red wine. Oh. And bacon! Local bacon.
