In a cocktail shaker, add vodka, apple puree, lemon juice, and honey syrup over ice.
Shake for three seconds.
Fine strain into a Collins glass.
Top with cider.
Garnish with apple slices.
Cut 5 Nova Scotia Golden Delicious apples into small cubes and remove core.
Add apple pieces along with 1/4 cup water and 1 tbsp. lemon juice to a pot.
Simmer over medium heat until apples are tender (approximately 10 minutes).
Let cool and puree in blender or food processor with 1 tbsp. local maple syrup and small pinch of salt.
Puree until silky smooth.
*Honey Syrup (2:1 honey to water)
Mix 2 parts Nova Scotia honey with 1 part hot water. Stir constantly to fully incorporate. Let cool. Store in airtight container and refrigerate.
