Lobster Roll - With Apple & Herbs

Meat from 1 cooked lobster (about 1 3/4 cups (450 mL))
2 Tbsp. (30 mL) mayonnaise
1 Tbsp (15 mL) finely cubed peeled tart apple
2 tsp (10 mL) chopped chives
2 tsp (10 mL) chopped tarragon
sea salt and freshly ground pepper to taste
handful of crisp lettuce
1 fresh baguette, or your bread of choice
1 Tbsp (15 mL) butter, at room temperature


Remove meat from cooked, cooled lobster and place in a small bowl (1 1/2 lb lobster yields about 1 3/4 cups meat).

Add remaining ingredients and stir to combine.

Slice baguette into two 6 inch(15 cm ) lengths - slicing horizontally, almost but not completely through. Lightly butter baguettes and line with crisp lettuce.

Top with lobster filling and serve.
