1/2 cup (125mL) shortening
1/2 cup (125mL) granulated sugar
1 tsp. (5mL) vanilla extract
1/2 cup (125mL) pure maple syrup
2 eggs, lightly beaten
1 3/4 cups (425mL) all-purpose flour
2 1/2 tsp. (12mL) baking powder
1/2 tsp. (2mL) salt
1/4 cup (60mL) milk
1/2cup (125mL) chopped nuts
- In a mixing bowl, cream together shortening, sugar and vanilla until well blended. Gradually beat in maple syrup. Add beaten eggs to mixture. Stir until well blended.
- In a small mixing bowl, combine flour, baking powder and salt.
- Alternately add the dry ingredients and the milk to the maple mixture until well blended and smooth. Fold in nuts.
- Place batter in a greased 8 x 8 inch (20 x 20 cm) baking pan and bake in a preheated 350°F (180°F ) oven for 45 minutes or until tester inserted in the cake comes out clean. Cool.
