Maple Syrup Cake

1/2 cup (125mL) shortening
1/2 cup (125mL) granulated sugar
1 tsp. (5mL) vanilla extract
1/2 cup (125mL) pure maple syrup
2 eggs, lightly beaten
1 3/4 cups (425mL) all-purpose flour
2 1/2 tsp. (12mL) baking powder
1/2 tsp. (2mL) salt
1/4 cup (60mL) milk
1/2cup (125mL) chopped nuts


  1. In a mixing bowl, cream together shortening, sugar and vanilla until well blended. Gradually beat in maple syrup. Add beaten eggs to mixture. Stir until well blended.
  2. In a small mixing bowl, combine flour, baking powder and salt.
  3. Alternately add the dry ingredients and the milk to the maple mixture until well blended and smooth. Fold in nuts.
  4. Place batter in a greased 8 x 8 inch (20 x 20 cm) baking pan and bake in a preheated 350°F (180°F ) oven for 45 minutes or until tester inserted in the cake comes out clean. Cool.
  5. Makes 16 pieces.
