In a medium size bowl add the chicken, celery, green onions and toss together. Add mayo, mustard and the seasoning. Mix well and let rest in the refrigerator until ready to serve.
8 slider buns, 4 slices double smoked county bacon, 8 tomato slices, 16 spinach leaves, 1 lb (500 g) Acadian/Cajun pulled chicken
Place spinach leaves on bottom half of a slider bun add 2 oz. (57g) of pulled chicken mixture then the tomato. Sprinkle with salt and pepper and finish with a slice of bacon and top of slider bun.
