Raspberry Upside Down Pudding

1/4 cup butter
1/2 cup packed brown sugar
2 cups raspberries
1/2 cup shortening
1/2 cup white sugar
1 egg, beaten
1 cup sifted flour
1/4 tsp baking powder
1/2 tsp salt
1/3 cup milk
1/2 tsp vanilla
ice cream or whipped cream, optional


  1. Melt the butter in a 9" square pan or pie plate. Sprinkle the brown sugar on the melted butter and arrange berries on top. Cream shortening and white sugar together, add the egg and beat. Sift the dry ingredients. alternately add the flour mixture and the milk and vanilla to the creamed mixture. Spread batter over the berries and up the sides of the pan. Bake at 350 degrees F for 25 to 30 minutes. Invert on warm plate and serve with ice cream or whipping cream.
