Tomato and Cucumber Salsa

Ingredients: 

1 large Maritime Greenhouse tomato, finely diced
1 cup (250 mL) Maritime Greenhouse cucumber, finely diced
1 small green chili pepper chopped or 1/4 tsp.(2mL) hot pepper flakes
1/2 clove garlic, chopped
2 Tbsp.(30mL) minced onion
1 Tbsp.(15mL) wine vinegar
1 Tbsp (15mL) chopped fresh coriander (optional)

Method: 

  1. In a bowl, combine tomato, cucumber, chili pepper, onion, vinegar, coriander and garlic; mix well.
  2. Transfer 1 cup (250mL) of the tomato mixture to food processor or blender and puree; return to remaining mixture in bowl.
  3. Serve at room temperature within 3 hours or cover and refrigerate for up to 3 days.
