8 cups (2L) wild blueberries
1 1/2 cups (375mL) golden seedless raisins
1 cup (250mL) white vinegar
1 1/2 cups (375mL)brown sugar, packed
1 cup (250mL) onions, peeled & finely chopped
2 Tbsp (25mL) orange zest
1 tsp. (5mL) dry mustard
1/2 tsp. (2mL) ground ginger
1/2 tsp. (2mL) ground cinnamon
1/4 tsp. 1mL) salt
pinch cayenne pepper and nutmeg
- In a large heavy saucepan, combine all ingredients. Bring to a gentle boil and simmer for 20 minutes, stirring frequently.
- Remove about half the sauce and puree in food processor or blender.
- Return to saucepan and continue simmering, stirring frequently, until thickened, for about 20 minutes. Continue to stir for additional 5 minutes, if necessary skim foam as required. Pour into hot sterilized bottles. Seal and cool.
