2 cups(500 mL) French vanilla ice cream
2 Tbsp (25mL) butter
3 Tbsp (45mL)granulated sugar
1 1/2 cups (375mL) fresh wild blueberries
2 oz (50 mL)Sambuca
4 Fan Wafers
- Note: frozen wild blueberries maybe substituted for fresh.
- Scoop ½ cup (125 mL) balls of ice cream into four dessert glasses. Place them in freezer. Melt butter in non-stick frying pan and add sugar. Cook over medium high heat until melted, stirring continuously. Add the blueberries and cook until glassy and just heated through, about 2-3 minutes. Add the Sambuca and reduce liquid till slightly thickened. Pour over Ice Cream and garnish with fan wafers.
